Role Overview

Corporate Executive Chef

Key Responsibilities

Culinary Leadership & Strategy

• Define, implement, and oversee the group-wide culinary vision and standards.
• Develop menus that are innovative, guest-focused, and aligned with sustainability and regional authenticity.
• Lead consistency across properties while allowing for local uniqueness in flavors and presentations.

Research & Development (R&D)

• Establish a Culinary R&D function to explore new concepts, techniques, and ingredients.
• Experiment with modern cooking methods while preserving traditional and regional recipes.
• Conduct ongoing market research to identify culinary trends, guest preferences, and global best practices.
• Innovate in areas such as plant-based cuisine, wellness dining, fermentation, and sustainable seafood.
• Collaborate with nutritionists, local farmers, and suppliers to create menus that balance health, sustainability, and taste.

Operational Excellence

• Standardize culinary SOPs, food safety protocols, and HACCP guidelines across properties.
• Oversee kitchen designs, equipment procurement, and layouts for new properties or renovations.
• Implement cost controls, inventory management, and resource optimization to ensure profitability without compromising quality.

Team Development & Training

• Mentor Executive Chefs and kitchen leaders across properties.
• Design training and skill-development programs, including cross-exposure and workshops.
• Build a pipeline of future culinary leaders within CGH Earth.

Guest Experience & Branding

• Collaborate with F&B and Marketing to create signature dining events, chef’s tables, and unique culinary experiences.
• Represent CGH Earth at external culinary forums, media events, and industry gatherings.
• Position food as a storytelling medium that reflects local culture and sustainability practices.

Sustainability & Community Engagement

• Promote farm-to-table initiatives by working with local farmers, fisherfolk, and artisans.
• Lead efforts in food waste reduction, zero-mile sourcing, and eco-conscious kitchen practices.
• Integrate forgotten, heirloom, and indigenous ingredients into menus to preserve culinary heritage.

Qualifications & Experience

• Degree/Diploma in Culinary Arts or Hotel Management from a reputed institute.
• 15+ years of progressive culinary leadership, including 5+ years in a corporate or cluster-level role.
• Proven expertise in managing multiple kitchens across diverse geographies.
• Strong knowledge of international cuisines, with deep appreciation for Indian regional, traditional, and sustainable cooking practices.
• Demonstrated experience in R&D, menu engineering, food cost management, and kitchen innovation.
• Excellent leadership, communication, and interpersonal skills.
