Job Title: Quality & Operation Executive – Bakery (3P Manufacturing).

Roles and Responsibilities:
1. Quality Assurance & Product Integrity
- Ensure all 3P bakery products (slice cakes, muffins, cookies, etc.) conform to the company’s quality standards, specifications, and sensory profiles.
- Conduct daily line audits at 3P units, including checks on hygiene, GMP compliance, and process adherence.
- Implement and monitor Quality Control measures across all stages of production — raw material, in-process, and finished goods.
- Supervise and approve sampling and testing protocols (microbiological, organoleptic, and physicochemical).
2. Third-Party (3P) Manufacturing Operations
- Coordinate day-to-day production activities at assigned 3P units, ensuring adherence to production planning, quality, and delivery timelines.
- Act as the single point of contact between company operations and the 3P manufacturing partner for technical, quality, and process-related matters.
- Monitor and support the implementation of SOPs, SSOPs, and batch manufacturing records (BMRs) at the 3P site.
- Validate process parameters and operating conditions for each product as per approved Product Master Sheets.
3. Regulatory Compliance & Food Safety
- Ensure 3P partners maintain compliance with applicable regulatory standards (FSSAI, BIS, Legal Metrology) and company-defined protocols.
- Support internal audits, third-party certifications (e.g., ISO 22000, FSSC 22000), and regulatory inspections.
- Train 3P unit staff in Food Safety, HACCP, GMP, and GHP practices.
- Ensure compliance to labelling requirements, shelf-life validations, and legal declarations on finished goods.
4. Vendor & Material Management Support
- Coordinate with internal procurement and supplier quality teams to validate new ingredients, packaging, or vendor changes at the 3P level.
- Monitor inventory levels for critical raw materials and packaging at 3P sites to prevent stock outs or overstock.
- Verify the traceability and documentation of all raw materials used in production.
5. Documentation, Reporting & MIS
- Maintain all necessary records, including:
- Batch manufacturing and packing records (BMR/BPR)
- Quality inspection records
- Audit reports and CAPA logs
- Deviation logs and incident reports
- Generate and share regular reports:
- Daily production reports
- Monthly quality metrics and dashboards
- Audit summaries and compliance trackers
6. NPD Trials & Commercialization Support
- Collaborate with the R&D and Innovation teams for New Product Development (NPD) and process validation at 3P sites.
- Conduct and document commercial-scale trials, line validations, and provide feedback for product and process improvement.
- Ensure first-time-right (FTR) for new launches by coordinating with packaging, procurement, and quality teams.
7. Process Improvement & Cost Optimization
- Identify opportunities for yield improvement, waste reduction, and cost-saving initiatives without compromising quality.
- Drive improvements in OEE (Overall Equipment Effectiveness) and process efficiency KPIs.
8. Cross-functional Collaboration
Work closely with:
- R&D for formulation and process validation
- SCM for demand planning and dispatch coordination
- Marketing & QA for packaging approval and complaint resolution
- Legal/Regulatory for label and product compliance
Requirements:
- 3–5 years of relevant experience in bakery production or quality (preferably with slice cakes, muffins, cookies).
- Bachelor's or Master’s degree in Food Technology, Food Science, or related disciplines.
- Good knowledge of bakery equipment, raw materials, and process controls.
- Strong understanding of food safety management systems and statutory regulations (FSSAI, ISO, HACCP).
- Experience in handling third-party or contract manufacturing units is highly desirable.
- Proficiency in MS Office and basic ERP systems.
- Excellent communication, coordination, and problem-solving skills.
