Production Incharge – Makhana (Fox Nut)- Manufacturing / Operations
Reporting to: Plant Head / Operations Head
Role Overview
The Production Manager will oversee end-to-end production of Makhana (fox nut) processing, including procurement handling, roasting, grading, popping, polishing, and packaging operations. The role requires strong experience in food processing, manpower management, quality control, and achieving production targets while maintaining safety and hygiene standards.
Key Responsibilities
1. Production Planning & Execution
Plan daily, weekly, and monthly production schedules based on demand and inventory levels.
Allocate manpower and resources to ensure smooth production flow.
Monitor roasting, popping, grading, polishing, and packing processes.
Ensure optimal utilization of machinery and minimize downtime.
2. Process Control & Optimization
Maintain machine parameters for roasting, popping, and grading for consistent output.
Implement process improvements to increase yield and reduce wastage.
Ensure energy efficiency and cost reduction in daily operations.
3. Quality Assurance
Ensure product quality at all stages of production.
Coordinate with QC team for testing moisture levels, popping quality, size grading, and final product standards.
Ensure compliance with FSSAI and food safety guidelines.
4. Inventory & Material Management
Monitor raw makhana (Gudi) stock, packing materials, and finished goods inventory.
Coordinate with procurement team for timely sourcing of raw materials.
Maintain accurate production and inventory records.
5. Team Management
Supervise machine operators, line workers, quality checkers, and helpers.
Conduct training for staff on machine operation, hygiene, and safety.
Maintain discipline, attendance, and performance evaluation.
6. Maintenance Coordination
Coordinate with maintenance team for preventive and corrective maintenance of roasting machines, popping machines, grading machines, and packing equipment.
Ensure minimal breakdown and high machine reliability.
7. Safety & Compliance
Implement plant safety protocols and ensure a clean, hygienic working environment.
Maintain documentation related to food safety, audits, and compliance.
8. Reporting
Prepare and share daily production reports, wastage analysis, and efficiency reports.
Present performance updates to management.
Key Skills & Competencies
Experience in Makhana / food processing / agro-processing preferred.
Strong knowledge of roasting, popping, grading, and packaging processes.
Leadership and team-handling skills.
Ability to troubleshoot production issues quickly.
Knowledge of FSSAI, GMP, HACCP, and food safety norms.
Good communication and documentation skills.
Qualifications
Diploma/Graduate in Food Technology, Engineering, or related field.
3–8 years of experience in food production; Makhana industry experience is a strong advantage.
