Your Role at a Glance:

As the Head Baker, you will be the creative and operational force behind our bakery operations, curating menus, managing production, maintaining excellence in consistency, and delivering delightful experiences to our guests through every loaf, croissant, or cake. You’ll mentor a team of bakers, collaborate with chefs across outlets, and uphold the highest standards of hygiene, quality, and presentation. Your role is central to creating memorable dining moments across the hotel’s restaurants, banquets, and in-room experiences.

What You’ll Do:

• Lead the design, preparation, and execution of all bakery offerings including artisan breads, viennoiseries, pastries, and signature bakes.
• Innovate seasonal menus and bespoke bakery experiences in collaboration with the Executive Pastry Chef.
• Ensure the production is calibrated based on standard recipes, process and procedures
• Oversee daily bakery production during night shift and all shifts, ensuring freshness, consistency, and optimal inventory management.
• Efficiently manage the production cost in accordance with the laid out budgetary guidelines.
• Uphold the highest standards of food safety, cleanliness, and HACCP compliance.
• Mentor, train, and inspire a team of bakers, fostering a culture of creativity, precision, and accountability.
• Liaise with procurement to ensure sourcing of the finest ingredients with attention to cost and quality.
• Support special events, high-tea, and custom VIP experiences with made-to-order bakery products.
• Maintain bakery equipment and plan preventive maintenance schedules.

Who You Are:

• A passionate baker and leader with at least 8 to 12 years of professional experience, including 3+ years in a managerial role within a luxury hotel or standalone bakery of repute.
• Skilled in sourdough and modern viennoiserie techniques, delivering superlative quality consistently.
• Detail oriented, highly organized, and thrives in a fast-paced, high-standard environment.
• Skilled at training and inspiring junior bakers, with a strong sense of team spirit and quality control.
• Driven to innovate while respecting tradition, delivering a product that looks as good as it tastes.
