Bread Lab is a modern artisan bakery specializing in European-style breads such as sourdough, baguettes, ciabatta, bagels, focaccia, brioche, multigrain loaves, and more. Our vision is to blend traditional craft with modern methods, delivering high-quality, hand-crafted breads made with precision, creativity, and consistency. We operate like a bread laboratory, focusing on fermentation science, quality ingredients, and an elevated, design-forward brand identity. Role OverviewThe Head Baker leads all bakery production operations, ensuring high-quality, consistent, and innovative products. This role demands strong technical baking skills, fermentation knowledge, leadership ability, and a passion for artisan methods. The candidate will oversee day-to-day production, maintain product standards, manage a team, and contribute to new product development. Key Responsibilities1. Production & Quality ControlOversee and execute daily production of artisan breads and baked goods. Ensure consistency in dough preparation, proofing, fermentation, shaping, and baking. Monitor product quality, texture, flavor, and presentation. Maintain accurate production timelines and manage multiple batches simultaneously. 2. Recipe & Product DevelopmentCreate and test new bread varieties and seasonal innovations. Improve existing recipes for consistency, flavor, and cost efficiency. Introduce signature breads aligned with Bread Lab’s identity. 3. Team LeadershipSupervise, train, and mentor junior bakers and assistants. Assign daily tasks, manage workflow, and maintain discipline. Foster a positive and efficient kitchen culture. 4. Inventory & Operations ManagementManage inventory of flour, grains, yeast, and raw materials. Coordinate with suppliers and ensure timely ordering. Control wastage and maintain ideal food cost percentages. Ensure machines, mixers, ovens, and fermentation equipment are maintained. 5. Hygiene & ComplianceEnsure strict hygiene, cleanliness, and safety standards at all times. Comply with FSSAI guidelines and internal SOPs. Conduct regular quality checks and maintain records. Skill RequirementsTechnical SkillsStrong knowledge of sourdough, preferments, hydration, scoring, crust development, and fermentation. Experience with deck ovens, spiral mixers, planetary mixers, proofers, and dough sheeters. Understanding of flour types and gluten behavior. Leadership & Soft SkillsStrong communication and team management capability. Ability to work under pressure and manage early morning shifts. Creative and detail-oriented with a passion for artisan baking. QualificationsDiploma or certification in baking/patisserie preferred. Minimum 5 years of experience in artisan bread production.
