Job Description

The F&B Controller is responsible for overseeing, controlling, and analyzing all Food & Beverage costs to ensure optimal profitability and operational efficiency. This role plays a key part in maintaining accurate costing, monitoring stock movements, preventing pilferage, and supporting management with data-driven insights to improve financial performance.

Key ResponsibilitiesCost Control & Analysis

  • Monitor daily F&B costs and ensure alignment with budgeted and forecasted targets.
  • Conduct regular cost analysis on recipes, menu items, promotions, and yield.
  • Review and verify the accuracy of purchase orders, GRNs, and vendor invoices.
  • Analyze variances and highlight deviations in cost, wastage, or consumption patterns.

Inventory & Stock Management

  • Oversee end-of-month stock-taking for all outlets, bars, kitchens, and warehouses.
  • Reconcile physical stock counts with system-based reports; investigate discrepancies.
  • Ensure proper inventory procedures are followed across all departments.
  • Implement loss prevention measures and monitor usage reports.

Systems & Reporting

  • Maintain and update the F&B cost control systems (POS, inventory software, ERP).
  • Prepare daily/weekly/monthly cost reports for management.
  • Generate recipe costing, standard yield sheets, and menu engineering reports.
  • Track KPIs such as food cost %, beverage cost %, wastage, variance, and consumption trends.

Compliance & Coordination

  • Ensure all F&B related transactions adhere to internal control policies.
  • Coordinate with Purchasing, Stores, Kitchen, Bar, and Accounts for smooth operations.
  • Support management during audits and ensure documentation accuracy.
  • Assist with menu planning from a cost perspective.

Skills & Qualifications

  • Bachelor’s degree in Hospitality, Finance, or related field.
  • 2–5 years of experience in F&B cost control, preferably in hospitality or F&B brands.
  • Strong analytical & numerical skills.
  • Proficiency in MS Excel and F&B software (POS, inventory systems).
  • Good understanding of kitchen operations, bar operations, and procurement flow.
  • Strong attention to detail and integrity.

Job Types: Full-time, Permanent

Pay: ₹23,000.00 - ₹28,000.00 per month
