We are looking for a highly skilled, innovation-driven Bakery Chef to lead UR Cup’s bakery menu development, product testing, and central production quality.
This role will focus on:
• Menu creation and product innovation
• Standardisation of recipes, SOPs and production workflows
• Managing food costs and driving profitability (≤ 30%)
• Training and upskilling the bakery team
• Maintaining excellence in breads, cookies, and dough preparation
• Supporting multi-outlet production requirements
The ideal candidate is both creative and operationally strong, with a proven ability to build processes, reduce wastage, and deliver consistent quality at scale.
• Develop seasonal and signature bakery items aligned with brand identity.
• Conduct market research to identify industry trends and customer preferences.
• Lead tasting sessions, recipe trials, and product refinement.
• Prototype, test, and scale new bakery items ensuring consistency in appearance, texture, and flavour.
• Set food-cost budgets and cost targets for all bakery product lines.
• Analyse ingredient yields, production waste, and portioning to maintain target margins (≤ 30%).
• Prepare variance reports and recommend menu pricing or ingredient adjustments.
• Ensure cost-effective sourcing in collaboration with the procurement team.
• Develop and maintain standardised recipes, recipe cards, and product specifications.
• Define exact portion sizes, ingredient measurements, and preparation steps.
• Ensure recipes are documented clearly and stored in the central recipe management system.
• Train bakers and junior staff on production techniques, food safety, and quality standards.
• Conduct structured training programs to improve skill levels and minimise errors.
• Provide continuous mentorship and performance feedback to the production team.
• Write and implement SOPs for every stage of bakery production, including mixing, shaping, proofing, baking, cooling, finishing, and packaging.
• Ensure SOPs remain updated, accessible, and strictly followed by all team members.
• Conduct periodic audit checks to maintain process accuracy.
• Supervise daily production schedules and ensure timely output for retail and bulk orders.
• Troubleshoot production issues and implement corrective actions to avoid recurrence.
• Coordinate with procurement to secure high-quality ingredients at favourable pricing.
• Support other bakery units and outlets when technical guidance is required.
• Ensure hygiene, sanitation, and food-safety compliance in accordance with FSSAI guidelines.
• Maintain allergen-management practices and internal audit standards.
• Participate in internal and external inspections and resolve non-conformities promptly.
• Diploma or Degree in Baking & Pastry Arts or equivalent culinary certification.
• Minimum 5 years of experience in bakery production, with at least 2 years in a supervisory or lead role.
• Demonstrated experience in launching new bakery products and managing food-cost budgets.
• Strong creative flair with an understanding of contemporary bakery trends.
• Excellent analytical skills for cost control, yield management, and portion accuracy.
• Ability to design and deliver structured training programs.
• Highly organised with strong documentation skills for SOPs and recipe manuals.
• Effective communication and leadership abilities.
• Proficiency in bakery equipment, KDS systems, and ERP tools used for production management 5.
• Experience working in both artisanal and high-volume bakery environments.
• Knowledge of local and international bakery trends.
• Proven success in reducing wastage and improving profit margins.
• Flexible schedule with the ability to work early mornings or weekends when required.
• Strong sense of ownership, reliability, and commitment to product quality.
