Job Title: Head Bakery Chef

Job Summary:

We are looking for a highly skilled and passionate Head Bakery Chef to lead the bakery and pastry operations at our newly opened Turkish Bakery, Pastry, and Café in Hyderabad. The ideal candidate must have in-depth expertise in authentic Turkish bakery and dessert techniques while also being innovative in creating modern café-style offerings. This role demands leadership, creativity, operational efficiency, and a strong commitment to maintaining premium quality standards.

Key Responsibilities:

Menu Development & Innovation

  • Design and curate an authentic Turkish bakery and pastry menu including items like baklava, simit, börek, poğaça, ekmek, künefe, and other traditional delicacies.
  • Innovate new café-style desserts, fusion pastries, and seasonal specials to attract diverse customers. Stay updated on global bakery trends and integrate them into the menu when appropriate.

Production & Quality Control

  • Oversee the preparation, baking, and finishing of all bakery and pastry items to ensure consistency in taste, texture, and presentation.
  • Ensure adherence to portion control, recipe standards, and quality benchmarks. Conduct regular tasting sessions to maintain top-tier culinary standards.

Team Leadership & Training

  • Lead and manage a team of bakery chefs, commis, and pastry assistants.
  • Train staff on Turkish baking techniques, ingredient handling, and presentation skills. Foster a collaborative, disciplined, and innovative kitchen environment.

Inventory & Cost Management

  • Manage sourcing and procurement of high-quality local and imported ingredients.
  • Maintain accurate stock levels, reduce wastage, and control production costs. Collaborate with management on pricing strategies and menu cost optimization.

Hygiene, Safety & Compliance

  • Ensure strict compliance with FSSAI guidelines, food safety, and hygiene standards.
  • Maintain a clean, organized, and safe bakery environment at all times. Oversee equipment maintenance and ensure smooth daily operations.

Cross-Functional Coordination

  • Work closely with the Restaurant Manager, Floor Manager, and Café Team to ensure timely order execution. Support marketing initiatives by creating special bakery promotions and themed menu offerings.

Qualifications & Experience:

  • Degree/Diploma in Bakery & Pastry Arts / Culinary Arts from a reputed institute. Minimum 6–10 years of experience in bakery and pastry operations, including 3+ years in a leadership role.
  • Mandatory expertise in Turkish or Middle Eastern bakery & desserts. Knowledge of advanced baking techniques, fermentation, lamination, chocolate work, and sugar art is a plus.

Skills Required:

  • Strong creativity and innovation in bakery & pastry creation.
  • Excellent leadership and people management abilities. Deep understanding of ingredient combinations, textures, and authentic Turkish flavors.
  • Strong organizational and planning skills. Proficiency in kitchen cost control, budgeting, and production planning.

Shift Timings: Rotational shifts, including weekends and holidays

Uniform: Mandatory; neat, clean, and professional appearance
Team Size Managed: 5–10 (Commis Chefs, Pastry Assistants, and Bakery Helpers)

Compensation & Benefits:

  • Salary Range: ₹45,000 – ₹1,00,000 per month (based on experience)
  • Additional benefits: Performance incentives, meal allowance, and training opportunities
  • Joining: Immediate / As per availability

Job Types: Full-time, Permanent

Pay: ₹45,000.00 - ₹100,000.00 per month
