Job Description

Job Purpose

The Food & Beverage Controller is responsible for controlling food and beverage costs, inventory, purchasing, and operational efficiency to maximize profitability while maintaining quality and compliance with company standards.

Key ResponsibilitiesCost Control & Analysis

  • Monitor, analyze, and control food and beverage costs, wastage, and variances.
  • Prepare daily, weekly, and monthly cost reports for food and beverage operations.
  • Conduct menu costing, recipe costing, and margin analysis.
  • Investigate cost variances and recommend corrective actions.

Inventory & Stores Management

  • Oversee inventory control, stock levels, and valuation of food and beverage items.
  • Conduct regular physical stock counts and reconcile variances.
  • Ensure proper storage, FIFO practices, and stock rotation.

Purchasing & Vendor Coordination

  • Coordinate with procurement for purchasing as per approved vendors and contracts.
  • Verify purchase orders, invoices, and supplier pricing.
  • Assist in vendor evaluation and cost negotiations.

Operational Controls

  • Ensure adherence to standard recipes, portion control, and yield management.
  • Monitor wastage, spoilage, breakage, and pilferage.
  • Support outlet managers and chefs in cost-efficient operations.

Reporting & Compliance

  • Prepare MIS reports related to F&B cost, inventory, and consumption.
  • Ensure compliance with internal controls, audits, and company policies.
  • Support internal and external audits.

System & Process Management

  • Maintain F&B control systems, POS, and inventory management software.
  • Train F&B and store teams on control procedures and documentation.

Key Skills & Competencies

  • Strong knowledge of F&B cost control and inventory management
  • Proficiency in POS and inventory systems
  • Analytical and detail-oriented mindset
  • Good coordination and communication skills
  • Ability to work in a fast-paced hospitality environment

Qualifications & Experience

  • Bachelor’s degree in Commerce, Finance, or Hospitality Management
  • 3–8 years of experience as an F&B Controller or similar role
  • Experience in hotels, restaurants, QSR, or catering operations

Job Type: Full-time

Pay: ₹25,000.00 - ₹35,000.00 per month
