F&B Controller

Job Summary

The F&B Controller is responsible for monitoring, analyzing, and controlling all Food & Beverage costs in the organization. The role ensures accurate costing, minimizes wastage, supports menu engineering, and maintains strict compliance with company standards, budgets, and financial objectives.

Key Responsibilities

• Monitor daily F&B costs and ensure alignment with budgeted cost targets.
• Analyze cost variances including food cost %, beverage cost %, and overall profitability.
• Conduct regular F&B cost audits across all outlets.
• Review recipes, yields, and portion control for accurate product costing.
• Oversee monthly and weekly stocktakes for all F&B stores and outlets.
• Verify inventory counts and reconcile any discrepancies.
• Maintain documentation for stock movement, transfers, wastage, and spoilage.
• Ensure accurate and updated inventory valuation.
• Coordinate with purchasing and receiving teams for correct pricing, quantity, and quality.
• Verify supplier invoices, delivery notes, and purchase orders.
• Support procurement in achieving the best pricing without compromising quality.
• Maintain cost control systems and ensure accuracy between POS, inventory, and financial systems.
• Prepare daily, weekly, and monthly F&B cost reports.
• Conduct menu profitability analysis and recommend pricing or recipe changes.
• Ensure compliance with company SOPs for purchasing, receiving, issuing, and consumption.
• Implement internal controls to minimize theft, pilferage, and wastage.
• Monitor bar control measures including par levels, standard recipes, and spillage logs.
• Collaborate with Executive Chef and F&B Manager to improve operational efficiency.
• Support menu engineering, promotions, and forecasting activities.
• Participate in F&B operational meetings and provide cost-saving insights.

Job Types: Full-time, Permanent

Pay: ₹30,000.00 - ₹32,000.00 per month
