Job Title: Research and Development ExecutiveLocation: Mayapuri, DelhiDepartment: Product Innovation & Quality AssuranceJob Summary:We are seeking a passionate and detail-oriented R&D Executive to join our dynamic ice cream brand. The ideal candidate will be responsible for developing new and innovative ice cream flavors and products, improving existing formulations, and overseeing quality checks across production batches. This role blends creativity in product innovation with a strong focus on quality assurance and regulatory compliance.

1. Product Development & Innovation

  • Develop new and exciting ice cream flavors, textures, and formats in line with brand positioning and customer preferences.
  • Research global and local market trends to identify flavor inspirations, ingredient innovations, and packaging ideas.
  • Translate consumer insights and marketing briefs into tangible product concepts.
  • Design and conduct lab-scale trials, pilot batches, and sensory evaluations.
  • Work with the procurement and operations teams to source ingredients and test new materials.
  • Maintain detailed records of formulations, trials, and product feedback.
  • Strong awareness of current market trends and consumer preferences.
  • In-depth knowledge of international flavor profiles and the ability to adapt or innovate them for local market appeal.

2. Product Improvement

  • Continuously improve existing products in terms of taste, mouthfeel, appearance, shelf life, and nutritional value.
  • Optimize recipes to reduce cost while maintaining quality standards.
  • Enhance product stability across different temperature conditions and shelf-life durations.

3. Quality Control & Assurance

  • Ensure strict adherence to food safety and hygiene standards during R&D and production.
  • Perform quality checks on raw materials, in-process products, and final outputs at regular intervals.
  • Investigate and resolve product complaints, deviations, or inconsistencies.
  • Liaise with the production team to address any real-time quality or process issues.
  • Support the implementation of HACCP, GMP, and other quality systems.

4. Cross-Functional Collaboration

  • Collaborate with production, procurement, packaging, sales, and marketing teams for end-to-end product execution.
  • Participate in new product launches, providing technical support and ensuring manufacturing readiness.
  • Work closely with design and branding teams to align product characteristics with consumer-facing communication.

5. Documentation & Compliance

  • Ensure all product documentation (formulas, trial reports, ingredient specifications) is up to date and audit-ready.
  • Monitor compliance with local regulatory authorities (e.g., FSSAI), including labelling, declarations, and nutritional claims.
  • Coordinate with external labs for product testing, microbiological analysis, and certifications if needed.

Qualifications & Experience:

  • Bachelor's or Master's degree in Food Technology, Dairy Science, Food Engineering, or a related field.
  • 2–4 years of relevant experience in food R&D and/or quality control, preferably in the frozen dessert, dairy, or FMCG sector.
  • Strong technical understanding of ice cream processing, stabilizers/emulsifiers, freezing techniques, and formulation.
  • Hands-on experience with sensory evaluation, product benchmarking, and production trials.
  • Proficiency in food safety management systems and regulatory standards.
