Job Title: Quality Control Chemist – Mustard Oil Mill Location: Plant Location - Nangal Rajawatan, Dausa, Rajasthan Reports To: Owner Job Type: Full-time | On-site Role Summary: The Quality Control Chemist is responsible for maintaining the quality and safety standards of mustard oil, khal and mustard seeds through systematic sampling, testing, and reporting. This role ensures that all products meet internal quality specifications, FSSAI regulations, and customer expectations, minimizing product recalls and safeguarding brand reputation. Key Responsibilities:Quality Testing & Analysis Conduct routine chemical and physical analysis of mustard seeds, intermediate materials, finished mustard oil, and Khal. Analyze critical parameters: Moisture content Oil content FFA (Free Fatty Acid) levels Peroxide value Adulteration detection Pungency level (allyl isothiocyanate content) Colour, odour, taste profiles Test packaging materials (bottles, cans, cartons) for compliance with specifications. Process Quality Control Perform inline process checks during pressing, filtration, filling, and packaging stages. Monitor and record batch-wise production quality. Recommend immediate corrective actions for deviations in product parameters. Inspect and verify tank storage conditions (temperature, contamination risks). Regulatory Compliance Maintain laboratory documentation and reports in accordance with FSSAI, AGMARK, and ISO standards. Ensure finished goods labelling and product standards comply with food safety regulations. Prepare samples for external lab testing and manage third-party certifications as needed. Documentation & Reporting Maintain daily QC logs for raw materials, WIP (work-in-progress), and finished goods. Generate weekly and monthly quality reports. Document non-conformities and maintain CAPA (Corrective and Preventive Action) records. Sampling & Retention Collect, store, and label retention samples batch-wise for traceability. Implement sampling plans for raw material (mustard seeds) at goods receipt. Lab Equipment Management Calibrate, maintain, and troubleshoot lab instruments such as moisture meters, oil content analyzers, acidity meters, etc. Maintain laboratory cleanliness, SOPs, and chemical stock. Training & Continuous Improvement Train production staff on basic quality parameters and hygiene practices. Suggest improvements in production processes to enhance oil yield and product quality. Qualifications and Skills:Education: B.Sc. / M.Sc. in Chemistry, Food Technology, Biochemistry, or related field. Experience: 2–5 years of quality control experience in edible oil, food processing, or FMCG industries. Prior experience in mustard oil quality control is highly preferred. Technical Skills: Strong knowledge of edible oil testing methods and FSSAI regulations. Familiar with AGMARK standards and testing procedures. Basic knowledge of ISO 22000 and HACCP is a plus. Proficiency in MS Excel for report preparation. Soft Skills: High attention to detail. Strong problem-solving and analytical skills. Good communication skills to coordinate with production and management teams. Ability to work independently and handle pressure during peak production periods. Working Conditions: 6-day working week (Sunday off or as per factory schedule). Must be willing to work in shifts if production demands. Predominantly factory and laboratory-based role with occasional site visits for raw material inspections.
