Job Description: Head Chef – Bakery

Position: Head Chef
Department: Production / Bakery
Location: Chennai
Reporting To: Managing Director
Employment Type: Full-Time

1. Position Overview

The Head Chef will be responsible for overseeing the entire bakery kitchen operations, ensuring high-quality product output, maintaining hygiene standards, and leading the bakery team. This role requires strong expertise in bakery production, menu development, staff training, and daily operational management.

2. Key Responsibilities & Production & Quality Control

  • Plan and supervise daily bakery production (breads, pastries, cakes, desserts).
  • Ensure consistent quality, taste, texture, and presentation of all items.
  • Develop new bakery products and seasonal menu items.
  • Implement standard recipes and maintain portion control.

B. Kitchen Operations

  • Manage kitchen workflow, staff schedules, and daily task allocation.
  • Monitor inventory levels and coordinate with procurement for raw materials.
  • Ensure equipment is maintained, clean, and functioning properly.
  • Reduce wastage and optimize production efficiency.

C. Hygiene & Safety

  • Ensure compliance with FSSAI and internal food safety standards.
  • Maintain cleanliness and sanitation in the kitchen at all times.
  • Conduct regular hygiene audits and staff training.

D. Team Management

  • Lead, supervise, and motivate kitchen staff.
  • Conduct training for new and existing team members.
  • Monitor staff performance and provide feedback.

E. Cost & Budget Control

  • Manage food cost, production cost, and minimize wastage.
  • Work with management on pricing, menus, and cost planning.

3. Required Skills & Qualifications

  • Diploma/Degree in Bakery & Confectionery / Culinary Arts.
  • Minimum 5–10 years of experience in bakery operations (including leadership role).
  • Strong knowledge of breads, pastries, cakes, and dessert production.
  • Excellent team management and communication skills.
  • Strong knowledge of baking techniques, food safety, and commercial equipment.
  • Ability to work under pressure and meet production deadlines.

Job Types: Full-time, Permanent

Pay: ₹45,000.00 - ₹75,000.00 per month
