Key Responsibilities

Production & Operations

  • Plan, manage, and execute daily production schedules for pastry and bakery items across all outlets.
  • Ensure all products meet established quality, consistency, and presentation standards.
  • Oversee mise-en-place and timely dispatch of items.
  • Collaborate with service teams for smooth kitchen-to-service coordination.

Team Leadership & Training

  • Supervise, train, and mentor the bakery and pastry team.
  • Conduct regular skill and hygiene training (HACCP, baking standards, etc.).
  • Delegate tasks effectively, ensuring production plans and deadlines are met.

Quality & Hygiene Compliance

  • Maintain impeccable hygiene standards in compliance with food safety regulations.
  • Monitor product storage, labeling, and rotation (FIFO).
  • Conduct routine kitchen and equipment inspections; report issues for maintenance.

Inventory & Cost Control

  • Monitor inventory usage and minimize wastage of raw materials.
  • Support regular stock-taking and maintain accurate inventory records.
  • Ensure consistent portioning and product quality across all batches.

Menu & Product Development

  • Contribute to seasonal menu creation, new product trials, and innovation.
  • Maintain a competitive and trend-forward product lineup aligned with brand standards.
  • Work closely with management to optimize product mix and pricing.

Requirements

  • Minimum Experience:

    10+ years in a similar role within a professional bakery, hotel, or pastry production setup.
  • Education:

    Formal training in Culinary Arts or Pastry (preferred).
  • Technical Skills:

    In-depth knowledge of baking and pastry techniques – including artisan breads, viennoiseries, cakes, tarts, and plated desserts.
  • Soft Skills:

    Strong leadership, time management, and communication skills.
  • Other:

    Ability to thrive in a fast-paced, high-volume environment with a focus on quality and innovation.
