Job Title: Commis Chef – South Indian Cuisine Department: Food & Beverage Production Location: Le Pondy Beach Resort, Puducherry Reporting To: Chef de Partie / Sous Chef Job Summary: As a Commis Chef specializing in South Indian cuisine, you will assist the culinary team in preparing authentic and high-quality South Indian dishes. You will work under the guidance of senior chefs, maintain hygiene standards, and contribute to delivering an exceptional dining experience to our guests. Key Responsibilities: Prepare a variety of South Indian dishes such as dosa, idli, vada, pongal, sambar, rasam, poriyal, avial, etc. Support senior chefs with daily mise-en-place and food production tasks. Follow standard recipes, presentation guidelines, and portion control procedures. Ensure cleanliness and sanitation of the work area and kitchen equipment. Comply with food safety standards and hygiene regulations (FSSAI compliance). Handle ingredients with care, label and store them appropriately. Assist in buffet setups, live counters, and special themed events. Minimize food waste through proper planning and preparation. Participate in internal training and maintain a learning attitude. Requirements: 1–2 years of relevant experience in a hotel, resort, or restaurant. Certification in culinary arts or food production is preferred. Sound knowledge of South Indian culinary techniques and spices. Ability to work in a fast-paced kitchen environment. Willingness to work shifts, weekends, and holidays.
