Job Summary

The Senior Steward is responsible for overseeing the cleanliness, organization, and hygiene of all kitchen and food preparation areas. This role includes supervising stewarding staff, ensuring compliance with sanitation standards, and coordinating with the culinary team to maintain efficient back-of-house operations.

Key Responsibilities

  • Supervise stewarding team and delegate daily cleaning and dishwashing tasks.
  • Maintain cleanliness of all kitchen areas, utensils, and equipment.
  • Monitor and ensure adherence to hygiene and sanitation standards (HACCP or local regulations).
  • Ensure proper handling and storage of cleaning chemicals and equipment.
  • Coordinate with the Executive Chef and Sous Chef for kitchen setup and support during service.
  • Train new stewards and support staff on cleaning procedures and safety protocols.
  • Maintain par levels for cleaning supplies and assist in inventory management.
  • Operate and maintain dishwashing machines and other cleaning equipment.
  • Support waste management and recycling initiatives.
  • Assist in kitchen deep-cleaning schedules and emergency clean-ups.

Requirements

  • Proven experience as a Steward, preferably in a hotel or large-scale restaurant.
  • Minimum of 2-3 years in stewarding with at least 1 year in a supervisory role.
  • Knowledge of cleaning chemicals, dishwashing equipment, and sanitation standards.
  • Strong leadership and team coordination skills.
  • Ability to work in a fast-paced, high-volume environment.
  • Physically fit to stand for long hours and lift/move equipment or supplies.
  • Flexible schedule – able to work nights, weekends, and holidays as required.

Preferred Qualifications

  • Basic Food Safety or HACCP Certification.
  • Prior hotel or resort experience.
  • Familiarity with inventory systems and kitchen equipment.
