We are hiring a Demi Chef de Partie (DCDP) specializing in wood-fired pizza to be the deputy leader of the pizza section. This role is designed for a skilled professional who can not only execute but also support leadership, manage shifts, and step up to run the section in the CDP’s absence. The DCDP will balance hands-on cooking, team coordination, and quality control, ensuring every pizza maintains the brand’s high standards. --- Key Responsibilities Operational Excellence Support the CDP in running the pizza station during prep and service. Take charge of the section when the CDP is off-duty, ensuring smooth operations. Manage wood-fired oven firing, heat control, and pizza rotation during busy hours. Oversee dough fermentation, stretching, topping, and baking with precision. Conduct mise en place checks and ensure readiness before service. Leadership & Team Support Guide commis and trainees on dough handling, toppings prep, and hygiene practices. Ensure all juniors follow recipes, portion standards, and plating consistency. Act as the right hand to the CDP, bridging communication with the Head Chef. Quality & Standards Maintain strict hygiene, food safety, and HACCP protocols. Monitor quality of ingredients and finished pizzas before they leave the pass. Report section performance, challenges, and improvements to the CDP. Stock & Cost Control Assist in stock management, requisition planning, and minimizing wastage. Keep a daily check on dough yield, portion control, and topping usage. --- Requirements Experience: 3–4 years in professional kitchens, with at least 1 year working with wood-fired pizza ovens. Strong knowledge of dough fermentation and pizza-making techniques. Ability to run the pizza section independently during service when required. Leadership potential — able to guide juniors, handle pressure, and support the CDP. Discipline, reliability, and passion for Italian cuisine.

Job Types: Full-time, Permanent

Pay: ₹25,000.00 - ₹29,000.00 per month
