Job Description

1. Job Summary

The Kitchen Supervisor is responsible for overseeing day-to-day kitchen operations, ensuring food quality, hygiene, and smooth workflow. The role involves supervising kitchen staff, maintaining inventory, enforcing safety standards, and supporting the Head Chef in overall kitchen management.

2. Key ResponsibilitiesA. Daily Kitchen Operations

  • Supervise food preparation, cooking, and presentation to ensure consistency.
  • Monitor order flow and ensure timely dispatch during peak hours.
  • Maintain recipe standards, portion control, and plating quality.
  • Ensure proper handling of kitchen equipment and tools.

B. Staff Supervision & Training

  • Allocate duties among commis, helpers, and support staff.
  • Provide training on recipes, hygiene practices, and SOPs.
  • Maintain staff discipline, grooming standards, and teamwork.
  • Evaluate team performance and provide feedback.

C. Inventory & Stock Management

  • Track daily stock consumption and report shortages.
  • Implement FIFO & FEFO for all raw materials and perishables.
  • Monitor wastage and take steps to reduce unnecessary loss.
  • Coordinate with the purchase department for replenishment.

D. Hygiene, Safety & Compliance

  • Ensure cleanliness of workstations, storage areas, and equipment.
  • Enforce kitchen hygiene protocols and FSSAI guidelines.
  • Ensure safe food handling and proper sanitization processes.
  • Report and follow up on equipment repairs or maintenance.

E. Documentation & Reporting

  • Maintain daily production logs, wastage reports, temperature logs, and cleaning checklists.
  • Track attendance and manpower allocation.
  • Submit daily/weekly reports to the Outlet Manager or Head Chef.

F. Quality Control

  • Conduct random tastings during prep and service.
  • Monitor food freshness and ingredient quality.
  • Address customer complaints related to food quality, if escalated.

3. Skills & Competencies

  • Strong leadership and team-handling skills
  • Good knowledge of kitchen operations and culinary basics
  • Ability to work in a fast-paced environment
  • Excellent communication and decision-making abilities
  • Attention to detail and strong organizational skills
  • Understanding of hygiene and safety regulations

4. Working Conditions

  • Rotational shifts, weekends, and holiday work required
  • High-temperature and fast-paced kitchen environment

Job Types: Full-time, Permanent

Pay: ₹13,477.22 - ₹25,000.00 per month
