Job Title : Food Cost Controller Location: Morjim, GOA Job Summary: The Food Cost Controller is responsible for tracking, analyzing, and controlling food and beverage costs in the restaurant. The role involves close coordination with purchasing, kitchen, and accounting teams to ensure optimal stock levels, minimize waste, and maintain profitability. Key Responsibilities: Monitor daily food and beverage consumption and analyze variance reports. Calculate food costs, portion costs, and pricing strategies to optimize profitability. Track inventory levels and perform regular stock audits to identify wastage, theft, or discrepancies. Collaborate with kitchen staff to ensure proper portioning and recipe adherence. Generate detailed reports on food cost trends, shrinkage, and usage patterns. Assist in setting and reviewing menu pricing in coordination with the chef and management. Implement cost control procedures to improve margins without compromising quality. Liaise with suppliers to evaluate pricing and negotiate best rates. Ensure compliance with food safety and hygiene standards during stock handling. Support budgeting and forecasting related to food and beverage expenses. Requirements: Bachelor's degree in Hospitality Management, Accounting, or a related field. Minimum 2 years of experience as a Food Cost Controller or similar role in the F&B industry.
