🍽️ HALDIRAM’S – Job Description (Commi I / Commi II / Commi III)Position: Commi I / II / IIIDepartment: Kitchen / Food ProductionLocation: Outlet / RestaurantReports to: DCDP / CDP / Sous Chef / Head Chef🔸 Job PurposeTo support the kitchen operations by preparing ingredients, cooking food items as per Haldiram’s standards, maintaining hygiene, and ensuring smooth functioning of the kitchen. 🔹 Key Responsibilities (All Levels)1️⃣ Food PreparationAssist in preparation of raw materials (cutting, chopping, marination). Prepare dishes as per standard recipes & portion size. Maintain consistency in taste, quality, texture & presentation. 2️⃣ Cooking SupportOperate kitchen equipment like fryer, oven, tandoor, grill, steamer, dosa plate (as applicable). Follow FSSAI guidelines, SOPs & Haldiram’s operational standards. 3️⃣ Hygiene & SafetyMaintain personal hygiene & grooming standards. Ensure cleanliness of workstation. Follow safety procedures in handling equipment & hot surfaces. Proper storage & labelling of food items (FIFO & FEFO). 4️⃣ Inventory & StockAssist in daily stock taking. Report shortages or excess to seniors. Reduce wastage & maintain portion control. 5️⃣ Team CoordinationWork closely with CDP, DCDP & service team to ensure timely order dispatch. Support in peak hours & rush operations. Maintain discipline & team spirit. 🔹 Role-wise Expectations👨‍🍳 COMMI I (Senior Cook)Independently handle one station (e.g., curry, snack, tandoor, bakery). Train Commi II & III. Manage production during peak hours. Ensure taste & quality as per brand guidelines. Handle equipment with expertise. Support CDP in menu preparation & new recipes. 👨‍🍳 COMMI IIAssist Commi I and CDP in cooking. Manage semi-preparations (gravies, dough, batters). Handle part of a station with supervision. Maintain food quality & speed. 👨‍🍳 COMMI IIIBasic preparation & cutting. Support in cleaning, peeling, washing, portioning. Learn cooking techniques and help seniors. Maintain kitchen hygiene standards. 🔹 Required Skills (All Levels)Basic cooking knowledge (Commi III) to advanced culinary skills (Commi I) Knowledge of Indian snacks, sweets, namkeen, fast food (as per Haldiram’s menu) Understanding of hygiene (HACCP / FSSAI) Ability to work in high-pressure environment Teamwork & communication skills 🔹 Qualification & Experience Commi I: 3–5 years experience Commi II: 1–3 years experience Commi III: Fresher–1 year Qualification: 10th / 12th / Hotel Management (preferred) 🔹 Salary Range (Typical QSR Standards – can vary by location) Commi I: ₹16,000 – ₹18,000 Commi II: ₹14,000 – ₹16,000 Commi III: ₹13,000 – ₹15,000
