Job Description

Chief cooks design new recipes and meals to provide to diners and guests. They may modify traditional dishes or create original ideas with available ingredients. When creating their recipes, chief cooks consider the skill level of their kitchen staff, the time they have to produce meals, the duration of prep time before meal service and the number of people they're serving. For example, a chief cook creating a speciality meal for a private dinner uses their skills differently from planning a bulk dinner for hundreds of people at a buffet.
Along with producing unique recipes, chief cooks create entire menus and meal plans. In restaurant settings, this can involve building a cohesive menu that provides options for people with different dietary restrictions while still showing the central theme of the restaurant. For chief cooks on ships, designing menus often requires being creative with a limited range of ingredients while providing guests with variety each day. Chief cooks may plan menus weekly and change meals for breakfast, lunch and dinner to incorporate new flavour into the rotation. They may also select complimentary beverages, like wines, to go with each meal.
