Job Description

Job Summary:

We are seeking an experienced and detail-oriented Chef de Partie (CDP) to manage the Continental and Chinese kitchen sections. The CDP will be responsible for supervising food preparation, maintaining quality standards, training junior staff, and ensuring smooth kitchen operations within their section.

Key Responsibilities:

  • Lead the Continental and Chinese kitchen sections during service hours.
  • Prepare and cook a variety of Continental and Chinese vegetarian dishes according to standardized recipes and presentation guidelines.
  • Supervise, train, and guide junior kitchen staff including Commis and helpers to maintain efficiency and quality.
  • Ensure all food items are prepared consistently and in compliance with health and safety standards.
  • Maintain cleanliness and hygiene of the workstation and ensure all kitchen safety protocols are followed.
  • Monitor inventory levels of ingredients and equipment for the section, and assist in stock ordering and management.
  • Collaborate with other kitchen sections and communicate effectively with the kitchen brigade and FOH team to ensure timely service.
  • Manage waste reduction and cost control within the section.
  • Participate in menu planning and recipe development when required.

Requirements:

  • Minimum 4 years of experience in a multi-cuisine or specialized kitchen with at least 2 years as a CDP handling Continental and Chinese cuisines.
  • Strong knowledge of cooking techniques, ingredients, and recipes specific to Continental and Chinese vegetarian cuisine.
  • Excellent leadership and team management skills.
  • Ability to work under pressure and maintain high standards of food quality and hygiene.
  • Good communication skills and ability to train junior kitchen staff.
  • Familiarity with FSSAI and HACCP regulations.

Preferred Qualifications:

  • Diploma or degree in Culinary Arts or Hotel Management (preferred but not mandatory).
  • Prior experience in pure vegetarian kitchens is a plus.
  • Creativity and willingness to innovate within the cuisine section.

Work Schedule:

  • Rotational shifts covering lunch and dinner services.
  • Availability on weekends and public holidays is essential.
