Job Description

Indian Sous Chef

Role & responsibilities

Assist the Executive Chef in managing all aspects of kitchen operations, especially in the continental section.
Supervise and train junior chefs, cooks, and kitchen staff to ensure consistency in quality and presentation.
Develop and execute new Indian dishes and seasonal menus in collaboration with the culinary team.
Ensure proper portion control, food cost, and waste management in line with budget requirements.
Maintain high standards of hygiene and cleanliness in compliance with food safety regulations (HACCP, etc.).
Monitor stock levels, place orders, and ensure the freshness and quality of ingredients used.
Conduct regular kitchen inspections and staff briefings to maintain operational excellence.
Handle guest feedback and complaints regarding food quality or presentation professionally.
Step in for the Executive Chef during his/her absence and manage the kitchen independently when needed.

Preferred candidate profile

Proven experience as a Sous Chef or Senior CDP specializing in Indian cuisine.
Culinary degree or diploma from a recognized institution preferred.
In-depth knowledge of Indian cooking techniques and presentation styles.
Strong leadership, organizational, and communication skills.
Ability to thrive in a fast-paced, high-pressure environment.
Flexibility to work evenings, weekends, and holidays as needed.
