Job Description

The R&D Manager Bakery & Confectionery will be responsible for new product development, formulation, standardization, scale-up, quality assurance, and regulatory compliance of bakery and confectionery products. The role involves close coordination with production, quality, marketing, and sales teams to support business growth, innovation, and customer satisfaction.

Key Responsibilities

Research & Product Development

  • Lead new product development for bakery and confectionery products such as premixes, jams, jellies, crushes, glazes, cake gels, fruit fillings, fondant paste, etc.
  • Develop, standardize, and scale up formulations from lab to commercial production.
  • Conduct shelf-life studies and product performance evaluations.
  • Evaluate new ingredients, technologies, and processing methods for innovation and cost optimization.
  • Maintain detailed R&D documentation, lab records, formulations, and test reports.

Technical & Process Excellence

  • Act as a technical consultant for formulation and processing issues across departments.
  • Lead cross-functional teams on product improvement, troubleshooting, and cost-saving initiatives.
  • Develop and implement SOPs, GMPs, and food safety management systems.
  • Ensure sanitation, equipment operation, inventory control, and process efficiency.

Quality & Regulatory Compliance

  • Ensure compliance with FSSAI and other statutory food regulations prior to product launch.
  • Supervise QA laboratory activities including microbiological and chemical testing.
  • Coordinate with third-party laboratories for sample verification.
  • Monitor raw material, packaging material, and finished goods quality.
  • Prepare and present quality, compliance, and performance reports to top management.

Production & Operations Support

  • Support production planning and execution including RM, PM, and FG inventory planning.
  • Review daily operational performance and identify improvement opportunities.
  • Coordinate with internal teams to ensure smooth and continuous operations.

Business & Market Support

  • Collaborate with marketing and sales teams to support product launches and customer trials.
  • Assist in business planning, pricing inputs, and cost analysis.
  • Handle customer technical queries, complaints, and feedback resolution.
  • Represent the company at trade shows, food exhibitions, and customer meetings.
  • Support sales growth through technical presentations, relationship management, and market insights.
