Quality Controller – Bakery Plant Job Summary

The Quality Controller is responsible for ensuring that all bakery products meet company quality standards, food safety regulations, and customer requirements. This role involves monitoring raw materials, production processes, finished products, hygiene practices, and documentation to ensure consistent product quality and compliance with food safety standards.

Key Responsibilities

  • Inspect and test raw materials (flour, yeast, sugar, fats, additives) for quality and compliance with specifications
  • Monitor bakery production processes (mixing, fermentation, baking, cooling, slicing, packing) to ensure quality standards are met
  • Conduct in-process and final product quality checks (weight, size, texture, taste, appearance, moisture, shelf life)
  • Ensure compliance with food safety standards such as HACCP, GMP, GHP, ISO 22000, or FSSAI (as applicable)
  • Monitor hygiene and sanitation practices of production staff and equipment
  • Verify proper cleaning and sanitation (CIP/COP) of machinery and work areas
  • Identify quality issues, deviations, and non-conformities; report and assist in corrective and preventive actions (CAPA)
  • Maintain accurate quality records, inspection reports, and test results
  • Conduct internal audits and support external audits by regulatory authorities and customers
  • Ensure proper labeling, packaging, and coding of finished products
  • Train production staff on quality, hygiene, and food safety practices
  • Coordinate with production, maintenance, and warehouse teams to resolve quality-related issues

Quality Control Activities

  • Product sampling and sensory evaluation
  • Weight and dimension checks
  • Shelf-life and storage condition monitoring
  • Metal detector and foreign body control verification
  • Allergen control and cross-contamination prevention

Required Skills & Qualifications

  • Diploma / Bachelor’s degree in Food Technology, Food Science, Microbiology, or related field
  • 1–3 years of experience in a bakery or food manufacturing plant (preferred)
  • Knowledge of bakery ingredients and processes
  • Strong understanding of food safety and quality systems
  • Good documentation and reporting skills
  • Attention to detail and problem-solving ability
  • Ability to work in shifts and on the production floor

  • Standing for long hours

  • Quality Assurance Manager / Production Manager

Job Type: Full-time

Pay: ₹8,428.24 - ₹50,000.00 per month
