Food And Beverage Controller

Position Summary -

The Food & Beverage (F&B) Controller is responsible for overseeing, analyzing, and controlling all costs related to the food and beverage operations of the organization. This role ensures financial accountability, compliance with internal policies, accurate reporting, and the implementation of effective cost control measures. The F&B Controller works closely with the Finance Department, Executive Chef, F&B Manager, and Purchasing team to maximize profitability while maintaining quality standards.

Key Responsibilities

Cost Control & Analysis

- Monitor daily food and beverage revenues, expenses, and variances.- Prepare and analyze daily, weekly, and monthly F&B cost reports.- Ensure all costs are properly allocated and reconciled against sales and inventory.- Track waste, breakage, and pilferage; recommend corrective actions.- Analyze cost trends and highlight opportunities to improve efficiency.

Inventory & Purchasing

- Supervise and coordinate monthly physical inventory counts for food, beverage, and operational supplies.- Verify accuracy of stock records against actual inventory levels.- Ensure proper receiving procedures are followed for F&B items.- Monitor supplier invoices and purchase orders for accuracy and compliance.

Compliance & Internal Controls

- Implement and enforce internal control procedures for F&B operations.- Ensure compliance with company policies, accounting standards, and statutory regulations.- Audit outlets regularly to ensure adherence to SOPs in receiving, storage, and issuance of F&B items.

Collaboration & Reporting

- Work with Executive Chef and F&B Manager to establish standard recipes and portion controls.- Provide financial insights to support menu engineering, pricing strategies, and promotions.- Support budgeting and forecasting processes for the F&B department.- Present cost performance reports and recommendations to senior management.

Qualifications & Skills

- Bachelors degree in Accounting, Finance, Hospitality Management, or related field.- Proven experience as an F&B Controller, Cost Controller, or similar role in hospitality/restaurant industry.- Strong knowledge of F&B operations, cost control techniques, and inventory management.- Proficient in accounting systems (e.g., Micros, POS, ERP, or inventory management software).- Advanced MS Excel and financial analysis skills.- Strong analytical, organizational, and problem-solving abilities.- Excellent communication and interpersonal skills.- High attention to detail and ability to work under pressure.

• Collaborate with kitchen staff to improve menu planning, ordering, and storage procedures.

• Conduct regular audits to identify areas for improvement in food waste reduction.

Desired Candidate Profile

• 3-5 years of experience in a similar role within the hospitality industry (hotels & restaurants).

• Strong knowledge of food costing principles and practices.

• Excellent communication skills with ability to work effectively with cross-functional teams.

• Proficiency in managing multiple priorities simultaneously under tight deadlines.
