Job Description

Role Overview: As a full-time Sous Chef at Great Lakes Loons, you will play a crucial role in supporting all culinary and food service operations at Dow Diamond. You will work closely with the Executive Chef to ensure kitchen leadership, food preparation, menu execution, staff training, inventory rotation, sanitation compliance, concessions operations, suite catering, event catering, and overall BOH efficiency are maintained at the highest standards. Key Responsibilities: - Prepare, cook, and present menu items for concessions, suites, hospitality catering, and special events. - Lead and train kitchen staff, providing hands-on support during food prep and service. - Ensure all food meets quality, consistency, and presentation standards. - Maintain sanitation and food safety procedures as required by the Midland County Health Department. - Monitor and record temperature logs, waste logs, and equipment logs. - Assist with inventory receiving, stock rotation, and commissary production. - Keep all kitchen equipment clean and operational, reporting issues immediately. - Support day-to-day kitchen operations and event execution in a fast-paced environment. - Follow company policies, safety procedures, and timekeeping standards. - Communicate effectively with the Executive Chef, F&B leadership, vendors, and team members. Qualifications: - Minimum 5 years of culinary experience required. - Strong knowledge of cooking techniques, food safety, and kitchen operations. - Ability to train and mentor staff in both fundamental and advanced cooking skills. - Excellent communication and teamwork skills. - Highly organized with strong attention to detail. - Reliable, self-motivated, and able to adapt to changing needs. - Must be able to work nights, weekends, and holidays as required.
