Job Description

Pastry Chef is responsible for leading the pastry and bakery section, overseeing the creation, production, and presentation of all desserts, pastries, cakes, ice creams, and baked goods, ensuring the highest standards of taste and aesthetic quality.

Responsibilities

Production & Execution:
Lead the daily preparation and production of all pastry items, including breads, plated desserts, chocolates, and special order cakes, ensuring consistency and adherence to standardized recipes.
Recipe Development:
Develop and test new recipes, techniques, and seasonal menus, contributing innovative ideas that align with current culinary trends and cost guidelines.
Quality Control:
Maintain strict
quality control
over all finished products, focusing on flavor balance, ingredient freshness, portion accuracy, and artistic presentation.
Inventory & Costing:
Manage the
inventory
of all pastry ingredients, oversee ordering, minimize
wastage
, and assist with accurate food costing and budget adherence for the section.
Hygiene & Safety:
Ensure the pastry kitchen and all equipment are maintained in impeccable condition, strictly adhering to
HACCP, food safety, and hygiene standards
at all times.
Team Leadership:
Supervise, train, and mentor Commis and Bakers, managing workflow and ensuring efficient operation during high-volume periods.
