Head Chef – Modern Indian & Seafood

Munjoh Resorts- Andaman Islands

About the Role
We’re looking for a visionary chef – someone who wants to make their mark in the culinary world. At Munjoh Ocean Resort, you will have the creative freedom to craft modern Indian cuisine with a strong seafood focus, while also running a small, tight, efficient kitchen. This role is ideal for a chef-creator: someone who can design, execute, and elevate dining into a signature experience that guests remember.

Key Responsibilities

  • Lead menu creation for modern Indian & seafood cuisine, blending tradition with innovation
  • Curate seasonal menus that highlight local produce & fresh catch
  • Execute dishes consistently at high standards, even in a small team setup
  • Train & mentor a small kitchen brigade – instill discipline, hygiene, and creativity
  • Manage kitchen operations: procurement, cost control, portioning & wastage reduction
  • Collaborate with F&B and resort leadership to create unique dining experiences (beach grills, chef’s table, wine dinners, pop-ups)
  • Ensure compliance with food safety, HACCP standards, and sustainability practices

What We Expect

  • 6–12 years of culinary experience (hotel, resort, or fine dining background)
  • Strong expertise in modern Indian cuisine + seafood handling & plating
  • Ability to run a compact kitchen without dependence on a large team
  • Creative thinker with passion for flavor innovation & presentation
  • A doer – disciplined, reliable, and outcome-driven
  • Good communication skills in English (must be able to explain menus to guests)
