Work closely with project and operations teams to design layouts for restaurants, bars, banquets, and lounge areas.
Finalize equipment, crockery, cutlery, glassware, and furniture requirements.
Develop standard operating procedures (SOPs) and service manuals for all outlets.
Coordinate with the Executive Chef and Purchasing for pre\-opening FB readiness.
2. Menu Concept Development
Collaborate with culinary and corporate teams to conceptualize outlet themes and menu designs.
Ensure beverage programs, wine lists, and bar operations reflect 5\-star luxury standards.
Drive innovation through unique dining experiences, local integration, and signature concepts.
3. Team Recruitment Training
Recruit, train, and develop a high\-performing service team aligned with Polo Towers\service philosophy.
Conduct pre\-opening training on service standards, upselling techniques, and guest engagement.
Build a culture of teamwork, discipline, and attention to detail.
4. Operations Service Excellence
Ensure smooth operations across all FB outlets and banquets post\-opening.
Monitor guest feedback, maintain consistency in quality, and handle VIP guest interactions.
Enforce hygiene, safety, and brand compliance in all service areas.
5. Financial Management
Prepare and manage pre\-opening and operating budgets for FB.
Achieve targeted revenue, cost ratios, and profitability metrics.
Implement inventory control systems, cost management, and wastage monitoring.
6. Sales Marketing Support
Collaborate with Sales Marketing for FB promotions, events, and partnerships.
Develop banquet and catering sales strategies.
Drive brand visibility through curated dining and beverage experiences.
Strong leadership and organizational skills
Excellent knowledge of restaurant and bar operations
Proven ability to manage multi\-outlet setups and banquets
Strong financial acumen and analytical capability
Exceptional guest service and communication skills
Creativity in concept development and event execution
Qualification Experience:
Degree\/Diploma in Hotel Management or FB Management
Minimum 10\15 years of experience in 5\-star or luxury hotels
Pre\-opening experience in FB operations is mandatory
Exposure to fine dining, mixology programs, and banquet operations preferred
