Job Description

As the Executive Chef at Jaisalmer Marriott Resort & Spa, you will be accountable for the overall success of the daily kitchen operations. You will exhibit your culinary talents by personally performing tasks while leading the staff and managing all food-related functions. Your primary focus will be on continually improving guest and employee satisfaction while maximizing financial performance in all areas of responsibility. It will be your responsibility to supervise all kitchen areas to ensure a consistent, high-quality product is produced while guiding and developing staff, including direct reports. Your role will involve leading the kitchen management team, providing direction for all day-to-day operations, and understanding employee positions well enough to perform duties in employees" absence or determine appropriate replacements. You will set performance standards, monitor performance, and utilize interpersonal and communication skills to lead, influence, and encourage others. It will be crucial to build mutual trust, respect, and cooperation among team members while ensuring property policies are administered fairly and consistently. You will be responsible for setting and maintaining goals for culinary function and activities, including developing and implementing guidelines and control procedures for purchasing and receiving areas, managing department controllable expenses, and participating in the budgeting process for areas of responsibility. Your expertise will be essential in ensuring culinary standards and responsibilities are met, by providing direction for menu development, monitoring the quality of food products, and ensuring compliance with food handling and sanitation standards. Exceptional customer service will be at the core of your responsibilities, where you will provide and support service behaviors that exceed customer satisfaction and retention expectations. You will manage day-to-day operations to ensure the quality and standards meet customer expectations while interacting with guests to obtain feedback on product quality and service levels. Moreover, as the Executive Chef, you will manage and conduct human resource activities, identify the developmental needs of others, ensure employees are treated fairly and equitably, and administer the performance appraisal process for direct report managers. Additionally, you will be responsible for interacting with the Banquet Chef and Catering department on training regarding food knowledge and menu composition. In this role, you will have additional responsibilities such as providing information to executive teams, managers, and supervisors, analyzing information, and evaluating results to choose the best solutions to solve problems.
