Job Description

Job Title: Commis 1 (South Indian / Kerala Cuisine) Department: Kitchen Reports To: Chef de Partie / Sous Chef / Head Chef Job Summary The Commis 1 is responsible for preparing and cooking food items as per Kerala café standards while maintaining hygiene, quality, and consistency. The role requires good knowledge of South Indian and Kerala cuisine, teamwork, and the ability to work in a fast-paced café environment. Key ResponsibilitiesPrepare, cook, and present Kerala and South Indian dishes according to recipes and standards Assist senior chefs in daily kitchen operations Ensure consistency in taste, portioning, and presentation Maintain cleanliness and hygiene of workstations as per food safety standards Handle kitchen equipment safely and report maintenance issues Assist in mise en place and stock rotation (FIFO) Follow standard operating procedures (SOPs) and café guidelines Minimize food wastage and ensure proper storage of ingredients Support smooth service during peak hours Requirements & SkillsProven experience as Commis 1 or similar role in a Kerala / South Indian kitchen Knowledge of Kerala cuisine (appam, puttu, dosa, curries, seafood, etc.) Basic understanding of food safety and hygiene standards Ability to work under pressure and in shifts Team player with a positive attitude Good time management and organizational skills
