OB DESCRIPTION – HEAD CHEF

Location: Sea Shells Beach Resort, Kavaratti Island, Lakshadweep

Sea Shells Beach Resort is looking to appoint a Head Chef for our Kavaratti property, who is committed to long-term island living and wishes to grow with the organisation, not work on a temporary basis.

This role is not suitable for short-term, seasonal, or experimental candidates.

POSITION OVERVIEW

The Head Chef will be responsible for complete kitchen operations, menu planning, food quality, hygiene standards, and kitchen team management. The role requires strong adaptability to island conditions, limited ingredient availability, and practical menu planning based on what is logistically feasible on the island.

CUISINE REQUIREMENTS

The candidate must specialise in:

• Indian Cuisine
• North Indian Cuisine
• South Indian Cuisine
• Desserts (Indian and basic continental desserts)

Ability to prepare consistent, good-quality desserts is mandatory.

KEY RESPONSIBILITIES

• Plan and manage menus based on ingredient availability on the island
• Maintain consistent taste, quality, and portion control
• Manage kitchen staff, duty rosters, and discipline
• Control food cost, wastage, and inventory
• Coordinate with management for procurement and menu changes
• Ensure hygiene, cleanliness, and food safety standards at all times
• Adapt menus creatively during supply delays or shortages
• Train and guide junior kitchen staff

ISLAND ADAPTABILITY (CRITICAL)

This position is based on Kavaratti Island, Lakshadweep.

The candidate must:

• Be mentally and physically comfortable with island living
• Adapt to limited supplies, weather conditions, and transport delays
• Be practical, flexible, and solution-oriented
• Respect local culture and the working environment

CONTRACT & COMMITMENT

• Minimum contract period: 2 years
• This is a long-term role, not a temporary assignment
• Candidates seeking short-term exposure should not apply
