Job Description

A commis chef job description involves performing food preparation duties, assisting the Chef de Partie with cooking, and maintaining kitchen hygiene and stock levels. Responsibilities include washing, peeling, and chopping ingredients; preparing simple dishes like salads and sauces; and ensuring workstations are clean and well-stocked. This entry-level position rotates through kitchen stations to provide broad experience and help the commis chef learn different aspects of the kitchen. Key Responsibilities

  • Food Preparation: Assist with preparing ingredients by washing, peeling, cutting, and seasoning vegetables, fruits, meats, and fish as instructed by the Chef de Partie.
  • Basic Cooking: Prepare and cook basic dishes, such as salads and sauces, for various dishes.
  • Kitchen Assistance: Support the Chef de Partie and other chefs by performing tasks as assigned and moving between different workstations to gain broad experience.
  • Stock Management: Assist with receiving deliveries, taking inventory of food supplies, and ensuring items are properly stored in refrigerators and freezers.
  • Hygiene and Sanitation: Maintain high standards of cleanliness at all times, including proper washing of hands, tools, and workstations, and disposing of expired or spoiled products.
  • Dish Presentation: Help with plating meal items for service, ensuring presentation meets quality standards.
