Job Description

The roles and responsibilities of a Chinese Chef de Partie (CDP) typically include:

Food Preparation:Prepare and cook Chinese dishes according to the restaurant's recipes and standards.
Ensure that all ingredients are fresh and of high quality.

Menu Development:Collaborate with the head chef or kitchen manager to create and update the Chinese cuisine menu.
Assist in designing new dishes and seasonal specials.

Quality Control:Ensure that all dishes are prepared and presented to meet quality and presentation standards.
Maintain consistency in taste, portion size, and plating.

Stock Management:Assist in inventory management by monitoring ingredient levels and reporting when supplies need to be replenished.
Properly store and label all food items.

Sanitation and Safety:Follow all health and safety guidelines and sanitation procedures.
Maintain a clean and organized workspace, including kitchen equipment and utensils.

Teamwork:Work closely with other kitchen staff members to ensure smooth service and timely food delivery.
Assist in training and mentoring junior kitchen staff.

Creativity:Bring creativity and innovation to the preparation and presentation of Chinese dishes.
Stay updated on current culinary trends and incorporate them into the menu when appropriate.

Adherence to Regulations:Comply with food safety and hygiene regulations and ensure that the kitchen team follows these standards.

Communication:Maintain effective communication with the kitchen team and front-of-house staff to ensure smooth service.

Shift Management:Manage the kitchen during shifts, ensuring that all dishes are prepared and served efficiently.
