Assistant Food And Beverage Manager

Role & responsibilities

• Coordinate daily F&B operations across restaurant, bar, banquets, room service, caf, or lounge areas.
• Assist in menu engineering, seasonal updates, and special promotions.
• Conduct regular inspections of dining areas, bars, kitchens, stores, and equipment.
• Manage table reservations and ensure smooth seating arrangements during peak hours.
• Monitor food preparation and presentation to meet quality expectations.
• Ensure each guest is warmly welcomed and attended to.
• Conduct guest interaction rounds to ensure satisfaction.
• Handle complaints and feedback gracefully and ensure quick recovery actions.
• Assist in implementing loyalty and membership programs to improve guest retention.
• Supervise service staff including captains, stewards, bartenders, and housekeeping support for F&B areas.
• Conduct regular training on service etiquette, upselling techniques, and product knowledge.
• Monitor grooming standards and discipline according to company policies.
• Recognize and reward high-performing employees.
• Assist in creating F&B budgets, forecasting, and cost-control strategies.
• Monitor food and beverage costs, breakage, pilferage, and wastage.
• Ensure revenue targets are met through upselling, promotions, and efficient service.
• Coordinate with the accounts team for billing accuracy and cash control.
• Maintain par stock levels for crockery, glassware, cutlery, linens, and beverages.
• Coordinate with vendors for timely supply of fresh ingredients and beverages.
• Conduct monthly inventory audits and ensure FIFO stock rotation.
• Ensure adherence to HACCP, FSSAI, and other health & safety regulations.
• Conduct fire and safety drills with the security team.
• Monitor safe handling of equipment, chemicals, and alcohol service protocols.
