Sous Chef

This position reports to the Head Chef and will be based across our Mumbai locations.

WHO YOU WILL REPORT TO

Head Chef

YOU WILL BE RESPONSIBLE FOR

1. Culinary Execution

  • Prepare and cook high-quality Indian savory dishes (chaats, curries, snacks, fusion items) with accuracy and consistency.

  • Follow recipes, portion standards, and maintain taste, texture, and presentation benchmarks.

2. Menu Development

  • Collaborate with senior chefs to develop seasonal and innovative savory menus.

  • Propose creative variations and contemporary twists while preserving authenticity and regional influence.

3. Kitchen Management

  • Oversee station operations, prep, and cooking processes.

  • Monitor inventory levels, ensure proper storage, maintain ingredient freshness, and minimize wastage.

  • Supervise junior staff during shifts to ensure efficiency and adherence to FSSAI hygiene protocols.

4. Training & Leadership

  • Train team members on spice blending, Indian cooking techniques, station management, and plating standards.

  • Foster a culture of learning, discipline, and excellence in the kitchen.

5. Collaboration

  • Work closely with FOH and other kitchen teams to maintain smooth service flow.

  • Coordinate timelines for dish execution to ensure consistent quality and timely delivery.

6. Compliance

  • Enforce kitchen safety protocols, hygiene practices, allergen awareness, and sanitation regulations.

  • Ensure full compliance with FSSAI and internal SOPs.

QUALIFICATIONS & SKILLS

Education & Experience

  • Culinary/Hospitality degree or equivalent hands-on experience.

  • 1 year

  • 23 years

Technical Skills

  • In-depth understanding of Indian spices, flavor profiles, and regional culinary styles.

  • Strong knowledge of traditional and modern Indian cooking methods.

  • Proficiency in Excel/Google Sheets for stock and inventory management.

Soft Skills

  • Strong leadership abilities; able to supervise and train junior staff.

  • Excellent organization, multitasking, and station management skills.

  • Adaptability to fast-paced environments while maintaining quality.

  • Strong attention to detail in taste, hygiene, and presentation.

  • A collaborative team player with clear communication skills.

  • High levels of creativity, passion, and culinary curiosity.
