About Offshore Canning

Offshore Canning is a growing seafood processing and canning company based in the Andaman Islands, specializing in high-quality canned sardines, mackerel, and value-added seafood products. With a strong focus on hygiene, innovation, and export-quality standards, we aim to deliver premium products from the pristine Andaman Sea to the global market.

Position Overview

The Seafood Canning Technologist will oversee and optimize the complete canning process—from raw material handling to final sterilization—to ensure product safety, consistency, and compliance with national and international food safety standards. This role requires strong technical expertise in thermal processing, retort operations, sauce formulation, vacuum creation, seaming, and shelf-life stability.

Key Responsibilities

1. Production & Processing

  • Supervise cleaning, nobbing, filling, brining/sauce addition, seaming, sterilization, cooling, and storage.
  • Monitor thermal processing parameters (temperature, pressure, Fo values) to ensure safe and effective sterilization at each batch.
  • Optimize yields, reduce wastage, and improve line efficiency across mixing tanks, filling lines, retorts, and conveyors.
  • Ensure correct fish size grading and loading per can (e.g., 50–60 pcs/kg sardines).

2. Quality Control & Food Safety

  • Implement HACCP, GMP, SSOP, and MPEDA/EIC export processing standards.
  • Inspect seaming quality (first/second operation parameters, countersink, seam thickness, overlap).
  • Conduct routine checks for defects—puffing, under-processing, discoloration, poor vacuum, salt/sauce imbalance.
  • Coordinate microbiological, chemical, and shelf-life testing.

3. Retort & Equipment Management

  • Calibrate retorts operating at 115°C / 1 bar and monitor sterilization performance.
  • Ensure accurate operation of pumps, storage tanks, vacuum systems, can sealer, and heat exchangers.
  • Validate cooling systems (PHC heat exchanger, cooling tower, water flow rates).
  • Troubleshoot equipment issues and coordinate with maintenance teams.

4. Product Development

  • Assist in development of new recipes (e.g., tomato sauce formulations, pet food variants, hot sauce).
  • Work on viscosity optimization using thickeners (e.g., xanthan gum).
  • Improve texture, flavor retention, and appearance consistency in finished products.

5. Documentation & Compliance

  • Maintain batch records, sterilization logs, seaming inspections, CCP documentation, and inventory reports.
  • Prepare compliance documents for MPEDA, FSSAI, EIC, and PMMSY-related approvals.
  • Ensure full traceability from raw fish procurement to finished goods shipment.

6. Team Coordination

  • Train workers on hygiene, can handling, draining, seaming, and critical control points.
  • Work closely with the production manager, procurement team, and quality supervisors.
  • Ensure smooth shift operations and manpower planning.

Required Qualifications

  • Bachelor’s/Master’s degree in Food Technology, Fish Processing Technology, Seafood Science, or related field.
  • 2–5 years of experience in canning, retort processing, or seafood processing preferred.
  • Strong understanding of thermal processing, HACCP, and seaming standards.
  • Knowledge of microbiology, food chemistry, and packaging science.
  • Ability to troubleshoot machinery and optimize production flow.
