Restaurant Manager

The Restaurant Manager at Rasayyah is the custodian of the guest experience. This role requires a leader who understands fine dining service standards, team discipline, and operational excellence, while working closely with the kitchen and ownership. Candidates without prior Indian fine dining experience will not be considered. Key Responsibilities Guest Experience & Service StandardsEnsure impeccable fine dining service at all times Personally handle VIPs, regulars, and critical guest interactions Resolve guest concerns with empathy, authority, and professionalism Maintain consistent service flow across lunch & dinner Team Leadership & TrainingLead, train, and discipline FOH team (captains, stewards, bartenders) Conduct regular service briefings and SOP refreshers Enforce grooming, etiquette, and service language standards Build a culture of accountability and hospitality excellence Operations & ControlsOversee daily restaurant operations and shift planning Ensure adherence to SOPs for: Opening & closing Cash handling Coordinate seamlessly with Head Chef on service timing and quality Sales & Revenue Responsibility Drive weekday dinner occupancy Upsell beverages, desserts, and tasting experiences Monitor APC, cover count, and table turns Ensure discounts and promotions are applied correctly and selectively Admin & ReportingDaily sales and cash reconciliation Staff attendance and roster management Weekly reporting to ownership on: Sales performance Guest feedback Staffing and service issues Required Skills & Experience (Non-Negotiable)4–6+ years experience in Fine Dining restaurants Strong understanding of: Fine dining service sequences Wine / beverage service (basic) Guest recovery techniques Proven ability to lead teams under pressure Fluent in English and Hindi (local language a plus) Presentable, calm, and guest-facing personality
