SAPA Bakery, a unit of Kaffeeklatsch Hospitality LLP, is growing our team! We are seeking an experienced and visionary Head Chef Pastry to lead our pastry operations at our Gokulam location in Mysore.

About the Role:

As Head Chef Pastry, you will drive innovation in R&D, oversee daily production, and ensure exceptional quality across pastries, viennoiseries, confections, custom cakes, and table scapes. This leadership role demands solid expertise in French patisserie basics, viennoiserie, and chocolate work, with a focus on recipe development, team training, and operational excellence in a dynamic artisan bakery.

Key Responsibilities:

• Lead R&D: Receive, develop, and tweak existing recipes for confections, viennoiserie, catering, table scapes, pastries, tarts, eclairs, and more. Collaborate closely to create new counter products, manage ingredient sourcing, admin backend (recipe writing, costing), and train juniors on new recipes, techniques, and tastings.
• Handle custom design cakes and table scapes tailored to client needs.
• Manage production as head: Plan and oversee daily pastry/viennoiserie production, shift rosters, new team member training, scheduling, SOPs, hygiene standards, daily briefings, and weekly team tastings.
• Maintain production sheets, costing sheets, indents, cost variance tracking, menu engineering, and smooth handovers to FOH—prioritizing absolute quality standards.
• Optimize work schedules and improve SOPs to prevent team overwork, handle custom order scheduling, and ensure timely deliveries.

What We’re Looking For:

• Proven experience as Head Pastry Chef or senior role in professional bakery/pastry environment.
• Strong fundamentals in French patisserie, viennoiserie, chocolate work, and recipe R&D.
• Leadership skills in team training, production planning, costing, and menu engineering.
• Passion for innovation, precision, quality, and efficient operations under pressure.
• Ability to collaborate, experiment with new products, and drive team excellence.
