F&B Captain – Job Description

The F&B Captain supervises and coordinates the daily operations of the restaurant or dining outlet. They ensure excellent guest service, maintain high standards of food and beverage quality, and support the service team in delivering a smooth and efficient dining experience.

Key Responsibilities

Guest Service & Experience

  • Greet guests, assist with seating, and ensure exceptional service throughout their dining experience.
  • Handle guest inquiries, complaints, and special requests promptly and professionally.
  • Maintain strong product knowledge of menus, ingredients, wines, and promotions.

Team Supervision

  • Lead, guide, and motivate waitstaff, runners, and stewards during service.
  • Conduct pre-shift briefings to communicate daily specials, reservations, and service standards.
  • Oversee table assignments, station setup, and overall flow of service.

Operations & Service Execution

  • Ensure all tables are properly set, clean, and presentable according to service standards.
  • Coordinate the timing of courses between kitchen and service teams.
  • Monitor order accuracy, food presentation, and beverage preparation.

Training & Development

  • Assist in training new staff on service procedures, POS operations, and guest interaction.
  • Conduct refresher training to maintain consistency and high standards.

Sales & Revenue

  • Promote upselling of beverages, desserts, and premium items.
  • Assist in managing reservations, seating plans, and guest flow to optimize revenue.

Compliance & Safety

  • Ensure hygiene, sanitation, and safety standards are followed at all times.
  • Comply with local regulations for food safety and liquor service.

Administrative Tasks

  • Assist with inventory, stock rotation, and requisitions of supplies.
  • Review POS checks for accuracy and support end-of-shift reports.

Qualifications

  • Previous experience in F&B service, preferably in a supervisory or captain role.
  • Strong communication and interpersonal skills.
  • Ability to lead a team and remain calm during busy operations.
  • Knowledge of POS systems and basic administrative tasks.
  • Certification in food safety or beverage service is an advantage.
