Commissary Food Production Head

Role Description

This is a full-time on-site role for a Commissary Food Production Head, located in Goa, India. The role involves overseeing daily food production operations, managing production planning and schedules, ensuring quality and efficiency in food preparation, and supervising the commissary production team. Responsibilities also include inventory management, budgeting, and maintaining regulatory compliance in a high-capacity commissary kitchen in Goa.

What You’ll Do:

• Set up and implement SOPs for collection, processing, and dispatch
• Manage production based on daily orders and demand forecasting
• Oversee yield testing and maintain optimal food costs
• Drive menu management and support new product development
• Handle end-to-end kitchen operations, including the full brigade under your leadership
• Coordinate purchase planning, inventory control, and timely dispatch between the store & dispatch team
• Train the team in SOPs and ensure adherence
• Prepare detailed production and cost reports for management

What We’re Looking For:

• 3 to 5 years experience, in a food production line or food manufacturing company
• Bachelor's degree in Culinary Arts, Food Science, or a related field preferred
• Strong skills in Production Planning and Production Management
• Experience in Operations Management and Team Management
• Proficiency in Budgeting and cost management
• Proficiency in using MS Excel and adapting to other inventory softwares
• Excellent organizational and leadership skills
• Ability to work effectively under pressure
• Previous experience in a similar role within the catering or food service industry is a plus
