Job Description

Job Title: Commis 1 / Commis 2 – Pizza Section Location: Sector 66, Mohali Department: Kitchen Job Purpose - To assist in preparing, cooking, and presenting pizzas and related dishes as per restaurant standards, ensuring quality, hygiene, and timely service. Key Responsibilities For Commis 1 (Senior Role): Prepare, cook, and present a wide variety of pizzas (thin crust, hand-tossed, wood-fired, etc.) following standard recipes. Manage pizza station operations, including dough preparation, topping arrangement, and baking. Ensure food quality, taste, portion, and presentation standards are maintained. Guide and train Commis 2 and kitchen helpers in basic pizza-making techniques. Maintain cleanliness and hygiene of the pizza station and kitchen equipment. Assist the Chef de Partie or Sous Chef in menu planning, specials, and stock control. Monitor inventory of pizza ingredients (cheese, sauces, toppings, dough) and report shortages. Follow HACCP and food safety guidelines strictly. For Commis 2 (Junior Role): Assist Commis 1 and Chef de Partie in daily pizza preparation. Handle basic tasks such as dough kneading, sauce preparation, slicing toppings, and setting up the station. Support in baking and assembling pizzas under supervision. Ensure mise-en-place is ready before service hours. Maintain high standards of hygiene and kitchen cleanliness. Learn and develop skills in pizza-making techniques. Follow kitchen SOPs, safety, and hygiene rules. Requirements For Commis 1: 3–5 years of experience in a pizza kitchen or similar role. Strong knowledge of pizza dough making, fermentation, and baking techniques. Ability to work in a fast-paced, high-pressure environment. Team management and training skills. For Commis 2: 1–2 years of kitchen experience (pizza experience preferred but not mandatory). Basic understanding of pizza preparation or willingness to learn. Ability to follow instructions and work under supervision. Positive attitude and eagerness to grow in culinary field. Key Skills Passion for pizza and Italian cuisine. Knife skills and dough-handling techniques. Time management and ability to multitask. Attention to detail and consistency. Strong teamwork and communication skills.
