Job Role - Commi 2
Address - IIM Mumbai, Morarji nagar, Saki vihar Road, Powai

Job Purpose

Assist the Indian & Tandoor section in preparation, cooking, and presentation of multi-cuisine dishes, ensuring quality, hygiene, and consistency as per Sarovar Hotels & Resorts standards.

Key ResponsibilitiesFood Preparation & Cooking

  • Prepare mise-en-place for Indian & Tandoor sections—marination, gravies, chutneys, breads, kebabs, etc.
  • Cook and assist in preparing Indian curries, gravies, rice, breads, and Tandoor items (roti, naan, kulcha, kebab, tikka, etc.).
  • Support other sections such as Continental, Chinese, or regional cuisine when required.
  • Ensure consistency in taste, presentation, and portion control as directed by the Chef de Partie.
  • Operate kitchen equipment like Tandoor ovens, grills, fryers, and ranges safely.
  • Check freshness and quality of ingredients before use; report any spoilage or shortage to supervisors.

Hygiene & Safety

  • Maintain the highest standards of kitchen cleanliness, hygiene, and food safety as per HACCP guidelines.
  • Follow proper storage procedures—label, date, and rotate stock to minimize wastage.
  • Keep Tandoor and cooking stations clean and organized at all times.
  • Follow fire, safety, and sanitation protocols strictly.

Teamwork & Coordination

  • Coordinate with chefs from other sections to ensure smooth food service during peak hours.
  • Support Commis I, Chef de Partie, and kitchen stewards in daily operations.
  • Attend pre-shift briefings and training sessions for menu updates and skill development.

Operational Support

  • Assist in inventory checks, receiving goods, and maintaining par stock.
  • Ensure that all dishes leave the kitchen in perfect condition, properly garnished and presented.
  • Communicate effectively with service staff to ensure timely delivery to guests.

Qualifications & Experience

  • Education: 10th / 12th pass; Diploma or Certificate in Hotel Management / Culinary Arts preferred.
  • Experience: 1–3 years in a professional kitchen, preferably in a hotel or fine-dining restaurant; exposure to Indian & Tandoor cuisine essential.
  • Technical Skills:
  • Basic understanding of Indian spices, marinades, and Tandoor techniques.
  • Familiar with food safety norms and multi-cuisine production.
  • Ability to handle kitchen equipment and maintain cleanliness.

Job Types: Full-time, Permanent

Pay: ₹20,000.00 - ₹23,000.00 per month
