Commi-2 (Indian)

As a Commi-2 specializing in Indian Cuisine, your role involves assisting senior chefs in preparing and cooking authentic Indian dishes. Your responsibilities include supporting mise-en-place, cooking as per recipes, and maintaining hygiene and quality standards in the Indian kitchen section. Key Responsibilities: - Assist in the preparation and cooking of Indian curries, tandoor items, gravies, rice, breads, and accompaniments. - Follow recipes, portion control, and presentation standards diligently. - Support Commi-1, DCDP, and CDP in daily kitchen operations. - Ensure timely mise-en-place for service. - Monitor and uphold cleanliness, hygiene, and food safety standards. - Handle ingredients with care to minimize wastage. - Safely and efficiently operate basic kitchen equipment. - Assist in training and guiding Commi-3 and new staff as needed. - Promptly report shortages, equipment issues, or maintenance needs to seniors. Skills & Requirements: - Good knowledge of Indian cuisine including curries, tandoor, breads, gravies, rice, and snacks. - Ability to thrive in a fast-paced kitchen environment. - Strong understanding of hygiene and food safety practices, including HACCP principles. - Team player with excellent communication skills and a positive attitude. - Capable of multitasking and working effectively under pressure, especially during peak hours. Qualification & Experience: - Diploma/Certificate in Culinary Arts or its equivalent. - Minimum of 2 years of relevant experience in Indian kitchens within hotels or restaurants.
