Job Description

Role Overview: As an Assistant Sous Chef at The Ritz-Carlton, your main responsibility is to assist the Sous Chef in maintaining the quality, consistency, and production of the kitchen. You will showcase your culinary talents by leading the staff, managing all food-related functions, and working with the team to enhance guest and employee satisfaction within the operating budget. Your role involves ensuring sanitation and food standards are met and developing and training the team for improved results. Key Responsibilities: - Supervise the preparation and production of hot or cold food items to ensure compliance with recipes and specifications. - Oversee kitchen shift operations, maintaining food preparation standards, and correct storage. - Plan and manage food quantities and plating requirements for various food operations. - Communicate production needs to key personnel and produce production prep lists. - Assist in developing daily and seasonal menu items, while ensuring compliance with laws and regulations. - Lead and coordinate activities of cooks and workers in food preparation, while demonstrating appropriate behaviors and maintaining productivity levels. - Set and support achievement of kitchen goals, including performance and budget goals, and manage to achieve or exceed budgeted goals. - Provide exceptional customer service, manage day-to-day operations, and handle guest feedback and complaints effectively. Qualifications Required: - High school diploma or GED with 4 years of experience in culinary, food, or related professional area; or a 2-year degree in Culinary Arts, Hotel and Restaurant Management, or related major with 2 years of experience in a similar field. - Strong interpersonal and communication skills to lead, influence, and encourage team members.
