Job Description

As an Assistant Sous Chef at The Ritz-Carlton, your primary responsibility is to assist the Sous Chef in ensuring the quality, consistency, and production of kitchen areas. You will exhibit your culinary talents by personally performing tasks, leading the staff, and managing all food-related functions. Your role involves working with the team to enhance guest and employee satisfaction while maintaining the operating budget. It is crucial for you to ensure that sanitation and food standards are consistently achieved while also developing and training the team to improve results. Your key responsibilities include: - Supervising the preparation and production of all hot or cold food items to ensure compliance with recipes and specifications - Ensuring kitchen shift operations adhere to Food & Beverage policies, standards, and procedures - Maintaining food preparation handling and storage standards - Planning and managing food quantities and plating requirements for various food operations - Communicating production needs effectively and producing production prep lists - Assisting in developing daily and seasonal menu items - Ensuring compliance with all relevant laws and regulations - Leading and coordinating activities of cooks and workers engaged in food preparation - Supervising and managing restaurant kitchen employees, encouraging mutual trust, respect, and cooperation among team members - Setting and supporting achievement of kitchen goals, including performance and budget goals - Providing exceptional customer service by exceeding customer satisfaction and retention expectations - Managing day-to-day operations to meet customer expectations and improve service quality - Identifying developmental needs of others and coaching them to improve their knowledge or skills - Participating in training restaurant staff on menu items and managing employee progressive discipline procedures - Attending and participating in all pertinent meetings Additionally, The Ritz-Carlton, as an equal opportunity employer, values and celebrates the unique backgrounds of its associates.
