Role & responsibilities

Position Overview

Food Product Development Specialist

Key Responsibilities

Product Formulation & Development

  • Develop, reformulate, and optimize recipes from concept to final product, ensuring consistency, quality, and scalability.
  • Conduct feasibility studies, bench trials, pilot runs, and scale-up processes for new formulations.
  • Design and execute experiments using structured methodologies such as DoE (Design of Experiments).
  • Document formulations, trial results, and insights meticulously for internal records and continuous improvement.
  • Refine recipes based on analytical data, sensory feedback, and market insights.

Ingredient Research & Innovation

  • Identify and evaluate new functional ingredients, flavor components, spices, seasoning blends, and stabilizers.
  • Stay updated on global food trends, emerging technologies, and innovative product categories to proactively contribute new ideas.
  • Partner with co-manufacturers, suppliers, and packaging vendors for trials, ingredient sourcing, and product validations.

Regulatory Compliance & Quality Assurance

  • Ensure all formulations comply with

    FSSAI

    regulations, food safety standards, and labeling guidelines.
  • Collaborate with external labs for shelf-life studies, nutritional analysis, and stability testing.
  • Maintain accurate technical documentation, including product specifications, ingredient declarations, and formulation sheets.

Cross-Functional Collaboration

  • Work closely with manufacturing teams to ensure smooth production trials and successful product scale-up.
  • Partner with supply chain and procurement teams to validate ingredient availability, cost implications, and commercial feasibility.
  • Support packaging teams in selecting suitable packaging formats, materials, and claims aligned with regulatory norms.

Skills & Qualifications

Must-Have Qualifications

  • 3–5 years of experience

    in food product development, preferably within a D2C, FMCG, or consumer food brand.
  • Educational background in

    Food Technology, Food Science, Nutrition

    , or a related field (CFTRI, NIFTEM, ICT alumni preferred).
  • Strong hands-on experience in

    spices, seasoning blends, or beverage formulation

    .
  • In-depth knowledge of

    FSSAI regulations, food safety standards, and labeling norms

    .
  • Experience with

    pilot trials, scale-ups, and structured experimentation (DoE)

    .

Preferred Skills

  • Ability to troubleshoot formulation challenges and optimize for taste, shelf life, and cost.
  • Proficiency in documentation, data analysis, and sensory evaluation techniques.
  • Strong problem-solving mindset with the ability to think creatively and execute quickly.
  • Excellent communication skills and a collaborative, builder’s mindset—curious, adaptable, and execution-oriented.
