**Job Description:** As a **Management** member at Courtyard Mumbai International Airport, your role involves being accountable for the quality, consistency, and production of the restaurant kitchen. Your culinary talents will be showcased through hands-on tasks, leading the staff, and managing all food-related functions. Here are your key responsibilities: - **Ensuring Culinary Standards And Responsibilities Are Met For Restaurant:** - Develop, design, or create new applications, ideas, relationships, systems, or products for the restaurant. - Supervise restaurant kitchen shift operations to ensure compliance with all Food & Beverage policies, standards, and procedures. - Maintain food preparation handling and correct storage standards. - Plan and manage food quantities and plating requirements. - Communicate production needs effectively to key personnel. - Assist in developing daily and seasonal menu items. - Ensure compliance with all applicable laws and regulations. - Follow proper handling and temperature standards of all food products. - Estimate daily restaurant production needs. - Prepare and cook foods of all types, ensuring quality and presentation standards are met. - Determine food presentation and create decorative food displays. - **Leading Kitchen Team:** - Supervise and coordinate activities of cooks and workers engaged in food preparation. - Lead shift teams, prepare food items, and execute requests based on specifications. - Manage restaurant kitchen employees, ensuring smooth day-to-day operations. - Encourage mutual trust, respect, and cooperation among team members. - Serve as a role model, ensuring productivity levels and cross-training of employees. - Establish and maintain collaborative relationships with employees. - **Establishing and Maintaining Restaurant Kitchen Goals:** - Set and support achievement of kitchen goals, including performance and budget goals. - Develop guidance and plans to prioritize daily kitchen operations. - Understand the impact of kitchen operations on financial goals and manage to achieve or exceed them. - Investigate, report, and follow up on employee accidents. - Implement company safety standards. - **Ensuring Exceptional Customer Service:** - Provide services that exceed customer expectations. - Manage day-to-day operations to ensure quality and meet customer expectations. - Improve service by understanding guest needs, providing guidance, feedback, and coaching. - Set a positive example for guest relations. - Empower employees to deliver excellent customer service. - **Managing and Conducting Human Resource Activities:** - Identify developmental needs of others and help improve their knowledge or skills. - Train restaurant staff on menu items and manage progressive discipline procedures. - Participate in the employee performance appraisal process and assist in hiring employee team members. **Additional Information:** Marriott International, the parent company of Courtyard, is committed to hiring a diverse workforce and sustaining an inclusive, people-first culture.
