Role Summary
The Trainee Captain – F&B Service is responsible for assisting in the smooth and efficient operation of assigned food and beverage outlets, ensuring exceptional guest service standards in line with five-star hospitality norms. The role involves supervising service staff, coordinating with the kitchen and bar, and delivering a personalized dining experience to guests.
Key ResponsibilitiesGuest Service & Operations
· Assist in overseeing day-to-day restaurant or outlet operations during assigned shifts
· Ensure guests receive prompt, courteous, and professional service at all times
· Handle guest queries, special requests, and complaints efficiently and politely
· Maintain high standards of food presentation, service etiquette, and hygiene
Team Supervision & Training
· Support the Captain/Outlet Manager in supervising stewards and service associates
· Assist in training new team members on service standards and SOPs
· Monitor staff grooming, punctuality, and performance on the floor
Coordination & Communication
· Coordinate with the kitchen and bar to ensure smooth service flow
· Communicate guest preferences, allergies, and special requirements accurately
· Assist in preparing shift briefings and relay operational instructions to the team
Standards & Compliance
· Ensure adherence to hotel policies, HACCP, hygiene, and safety standards
· Follow five-star service protocols and brand guidelines consistently
· Assist in maintaining cleanliness and proper setup of service areas
Administrative Support
· Assist with billing procedures, POS operations, and cash handling as required
· Support inventory control, requisitions, and stock monitoring
· Help in preparing daily service reports and feedback logs
Candidate ProfileQualifications
· Diploma or Degree in Hotel Management / Hospitality or related field
· Candidates with 1–3 years of experience in F&B Service preferred
Skills & Competencies
· Strong communication and interpersonal skills
· Customer-focused attitude with attention to detail
· Ability to work in shifts, including weekends and holidays
· Team player with leadership potential
· Knowledge of food & beverage service styles and basics of wine and beverages
